Oven-Roasted Apricot Pork Tenderloin

Oven-Roasted Apricot Pork Tenderloin

Ingredients

  •  ¼ cup olive oil
  •  1/ 3 cup Apricot Preserve
  •  1 teaspoon of fresh rosemary
  •  1 clove of minced garlic
  •  the zest of ½ orange
  •  the juice of ½ orange
  •  1 teaspoon of dry mustard

Directions:

Blend all ingredients well in a food processor or electric blender. Place your pork tenderloin in a cast-iron pan and spoon the mixture over.

Let relax for ½ hour or until pork tenderloin is at room temp. Heat oven to 400ºF and place your pan in the middle of the oven and sear for 10 minutes. Reduce heat to 350ºF and continue cooking (25 minutes per pound).

Once meat is cooked, remove from the pan and deglaze the pan with 2 tablespoons of white wine. Use the sauce for serving along side the sliced pork. Garnish and serve.
